تولید ماست غنی شده با استفاده از عصاره گیاه خرفه و بررسی خصوصیات فیزیکو شیمیایی وحسی و آنتی اکسیدانی آن

در این پژوهش به منظور بررسی اثر افزودن عصاره خرفه و انبارمانی ماست غنی شده ، آزمایشی به صورت اسپلیت پلات در زمان در سه تکرار در دانشگاه آزاد اسلامی واحد سبزوار انجام شد. غلظت های مختلف عصاره ( شاهد ، 1 % ، 2 % و 3 % ) به عنوان عامل اصلی و زمان ( 1 ، 7 ، 14 و 21 روز) به عنوان فاکتور فرعی بود . در مورد فاکتورهای کمی تجزیه واریانس در قالب طرح کامل تصادفی و در آنالیزهای حسی از طرح بلوک کامل تصادفی استفاده شد. در این بررسی از 9 ارزیاب آموزش دیده جهت بررسی خصوصیات کیفی ماست تولید شده در قالب سیستم هدونیک 5 نقطه ای استفاده شد.در مواردی که اثرات متقابل غلظت در زمان معنی دار شده بود از روش برش دهی استفاده شد. . نتایج نشان داد در رابطه با pH و اسیدیته، نمونه حاوی 3 درصد غلظت عصاره، pH بالا و اسیدیته پایین تری نسبت به نمونه های دیگر داشت و مدت زمان نگهداری تاثیر معنی داری روی این دو شاخص داشت.به لحاظ آب اندازی، افزودن عصاره در تمام سطوح موجب کاهش سینرزیس شد. فعالیت آنتی اکسیدانی و میزان ترکیبات فنولی نمونه های حاوی عصاره به طور معنی داری بیشتر از ماست ساده بود. بطوریکه بیشترین فعالیت آنتی اکسیدانی به میزان 27/7 درصد در نمونه حاوی غلظت 2 درصد عصاره و در روز اول نگهداری مشاهده شد. بیشترین مقدار ترکیبات فنلی نیز در این نمونه در روز اول و به میزان 12/1 میلی گرم اسید گالیک در 100 میلی لیتر عصاره مشاهده شد.با گذشت زمان میزان فعالیت آنتی اکسیدانی و ترکیبات فنولی به طور معنی داری کاهش یافت .با افزایش مدت ، میزان ویسکوزیته نمونه ها افزایش یافت، بطوریکه کمترین ویسکوزیته در روز اول و بیشترین در روز هفتم بود. تاثیر مقادیر عصاره ی گیاه خرفه و مدت زمان نگهداری بر روی شاخص های رنگی نمونه ها معنی دار بود، بطوری که با افزایش غلظت عصاره میزان شاخص a*وb*و?Eافزایش و L* کاهش یافت و درمدت زمان نگهداری میزان شاخص b* و a* وE? کاهش و شاخص L*افزایش یافت.بررسی ویژگی های حسی نیز نشان داد که با افزایش زمان درصد پذیرش کلی نمونه ها کاهش یافت.

Production of fortified yogurt with purslane herb extract and investigation of its physico-chemical sensory and Antioxidant properties

In this study, in order to evaluate the effects of adding purslane extract and enriched yogurt storage, Split plot in time experiment was done with three replications in Islamic Azad University of Sabzevar. Different concentrations of the extract with (testifier 1%, 2%, 3%) as the main factor and time (1, 7, 14, 21) time intervals as the sub-plots. In order to determine the variance in a completely randomized design and randomized complete block design was used during the sensory analysis . In this study, nine trained panelists were invited to evaluate the quality of yogurt production in a hedonic 5-point system. The incision was used, when the interaction concentration effects at the time were significant. The results showed that regarding pH and acidity , samples containing 3% concentration had a high pH and lower acidity compared with other samples and storage time had a significant impact on the index . In terms of water, adding extract at all levels reduced synersis. Antioxidant activity and phenolic compounds in those samples containing the intended extract was significantly higher than the plain yogurt. The highest antioxidant activity of 27.7 percent was observed in a sample containing 2% concentration of the extract and the first day maintenance. The highest amount of phenolic compounds in the sample was observed on the first day and 1.12 mg of gallic acid in 100 ml of extract. Over time, the amount of antioxidant activity and phenolic compounds significantly reduced. With increasing time, the viscosity of the samples increased, in which case the minimum viscosity on the first day and the maximum was the seventh day. Effects of purslane extract and storage time on the indicator color samples was significant, i.e., with increasing the concentration of extract, the amount of indexes a* and b* and E? was increased and L* fell and within the time of maintenance, the amount of indexes a* and b* and E? fell down while L* increased. Investigation of the organoleptic characteristics showed that with increasing time, the total percentage of acceptance decreased.
