برسی خواص فیزیکو شیمیایی و ارگانولپتیکی کنسرو فلفل کاردولا
میوهها و سبزیها ماندگاری محدودی دارند؛ کنسرو کردن روش مناسبی برای افزایش نگهداری آنها است. در این پژوهش فلفل کاردولا در شیشههای حاوی 5% سرکه سفید و به دو روش پاستوریزاسیون و
غیر پاستوریزاسیون کنسرو شد و در دوره نگهداری 3 ماهه ویژگیهای شیمیایی شامل Ph، اسیدیته، ویتامین C، و ویژگیهای ارگانولپتیکی مورد بررسی قرار گرفت. قدرت آنتیاکسیدانی در غلظتهای
ppm 200-2000 ارزیابی شد. بررسی فعالیتهای مهارکنندگی رادیکال آزاد نشان داد کمترین میزان فعالیت مربوط به کمترین غلظت ppm200، 86/4 درصد و در کنسرو پاستور شده است و بیشترین میزان فعالیت آنتیاکسیدانی مربوط به بالاترین غلظت ppm2000، 91/38 درصد در کنسرو پاستور شده مشاهده گردید. پس از گذشت سه ماه نگهداری، کنسرو فلفل پاستور شده مشخص شد با افزایش غلظت عصاره، اثر آنتی رادیکالی آن افزایش مییابد. در غلظتهای ppm200-400 در هر سه ماه نگهداری کنسرو فلفل، کمترین میزان فعالیت آنتیاکسیدانی مشاهده شد.
در اندازهگیری ویتامین C در هر دو نمونه کنسرو از دست رفتن آن مشهود بود ولی میزان از دست رفتن این ویتامین در کنسرو فلفل پاستور شده کمتر بود.
در ارزیابی حسی رنگ، کنسرو فلفل پاستور شده در طی سه ماه نگهداری، مورد پذیرش بیشتری قرار گرفت. و همچنین در ارزیابی حسی آروما تفاوت معنیداری در هر دو نمونه در ماه دوم و سوم مشاهده نشد. در ارزیابی حسی طعم و بافت پذیرش هر دو نمونه پاستور شده و پاستور نشده در ماه دوم نگهداری بیشتر مشاهده شد.

Investigating of the physico-chemical and organoleptic properties of canned cardoula pepper
Fruits and vegetables have limited shelf life; canning is a good way to increase their storage. In this study, cardoula pepper was preserved in jars containing 5% white vinegar in both pasteurization and non-pasteurization methods. Chemical properties including Ph, acidity, vitamin C, and organoleptic properties were evaluated during the 3-month storage period. The antioxidant power was evaluated at concentrations of 200-2000 ppm. Evaluation of free radical scavenging activity showed that the lowest activity was related to the lowest concentration of 200 ppm, 4.86% in pasteurized canned, and the highest antioxidant activity was related to the highest concentration of 2000 ppm, 38.91% in pasteurized canned.
After three months of storage, pasteurized pepper canned was found to increase its antioxidant effect as the concentration of the extract increased. The lowest antioxidant activity was observed at concentrations of 200–200 ppm in canned pepper every three months.
Vitamin C was measured in both canned samples but was lower in pasteurized pepper canned. n sensory evaluation, pasteurized canned peppers were more accepted during the three months of storage. Also, there was no significant difference in sensory evaluation of aroma in both samples in the second and third months.
