بررسی تاثیرافزودن شیرین بیان بر خواص حسی، فیزیکی و شیمیایی میکروبی کشک خشک سنتی

در این پژوهش، ریشه گیاه شیرین بیان خشک و تبدیل به پودر شد. سپس در حین فرآیند تولید کشک از پودر ریشه شیرین بیان در سطوح 0 ، 1 ، 3 ، و 5 درصد به فرمولاسیون کشک اضافه گردید. نمونه های تولید شده آبگیری و خشک شدند. در انتها ویژگی های فیزیکوشیمیایی ، حسی و میکروبی نمونه های تولید شده مورد بررسی قرار گرفت. از نظر فیزیکوشیمیایی، با افزایش پودر ریشه شیرین بیان به نمونه های کشک؛ درصد رطوبت افزایش، اما درصد پروتئین، درصد خاکستر و سفتی بافت نمونه ها نسبت به نمونه شاهد بطور معنی داری کاهش یافته بود(05/0>p). ضمنا در درصد چربی و درصد نمک نمونه ها تغییری مشاهده نگردید. در بخش آزمون های میکروبی؛ با افزایش پودر ریشه شیرین بیان به نمونه های کشک؛ موجب شد تا کلی فرم، اشریشیا کلی، کپک، مخمر و کلستریدیوم های احیاء کننده سولفیت مثبت شود. اما نه در تمام نمونه ها، 96 درصد از نمونه های مورد بررسی فاقد کلستریدیوم های احیا کننده سولفیت بود و در 2 درصد نمونه ها نیز میزان آلودگی به این باکتری در حد مجاز استاندارد قرار داشت. ضمن آنکه به ترتیب 96 درصد و98 درصد از نمونه ها فاقد آلودگی به کلی فرم ها و اشریشیا کولی بودند و میزان آلودگی مجاز به کپک و مخمر فقط در 6 درصد نمونه ها مشاهده شد. در بخش آزمون های حسی؛ با افزایش پودر ریشه شیرین بیان به نمونه های کشک؛ رنگ نمونه ها تا سطح 3 درصد مطلوب، بو و طعم نمونه ها افزایش، نرمی بافت نمونه ها نیزمناسب و بطور معنی داری افزایش یافت. ارزیاب ها از نظر پذیرش کلی معتقد بودند که با افزایش پودر ریشه شیرین بیان به نمونه ها، کیفیت ارگانولپتیکی آن ها نیز افزایش یافته است. بدین صورت که نمونه دارای 5 درصد شیرین بیان را مطلوب ترین نمونه و سپس با کاهش درصد شیرین بیان امتیاز کمتری به نمونه ها دادند

Investigating the Effect of licorice on the sensory, Physical and Chemical and bacterial Dry Whey

In this study, the licorice root was dried and powdered. Then, during the process of dry whey production from licorice root powder at 0, 1, 3, and 5% levels was added to the dry whey formulation. The samples were dehydrated and dried. The finally, physicochemical, sensory and microbial characteristics of the samples were investigated. In the physicochemically section, by increasing licorice root powder to dry whey samples; The moisture content increased, but the protein content, ash content and firmness of the samples were significantly decreased compared to the control sample (p <0.05). Also, no changes were observed in fat percentage and salt content of samples. In the microbial section,by Increasing licorice root powder to dry whey samples caused in positive sulphite-reducing coliform, Escherichia coli, mold, yeast and Clostridium. But not in all samples, 96% of the samples were free of sulfite- reducing Clostridium, and in 2% of the samples, the level of infection was standard. 96% and 98% of the samples, respectively, were free of coliforms and Escherichia coli. And only 6% of the samples were infected with mold and yeast. In the sensory tests section; by increasing licorice root powder to dry whey samples;. The color of the samples increased to the desired level of 3%, the taste and odor of the samples increased, the texture of the samples increased significantly. The evaluators believed that with the increase of licorice root powder in the samples, their organoleptic quality has also increased. The sample with 5% licorice was the most favorable sample and then with the reduction of licorice percentage the lowest score was given to the samples.
