بررسی اثر عصاره ی گیاه شنبلیله برخواص فیزیکوشیمیایی ،حسی و ماندگاری ماست
چکیده
اسانسها و عصارههای گیاهی به عنوان عوامل بسیار مناسب محافظت کننده مواد غذایی مطرح هستند. ایجاد عوارض جانبی کمتر نسبت به داروهای سنتزی، عدم ایجاد مقاومت دارویی، سلامت و بهداشت محیط زیست از مزایای استفاده از داروهای گیاهی است. وضعیت تغذیه جمعیتها از جذب بالای قند، نمک، اسیدهای چرب اشباع، دریافت پایین فیبرها، ویتامینها و مواد معدنی تاثیر میپذیرد، این عادات غذایی از اصلیترین علل ایجاد بیماریهای مزمن غیر واگیر هستند بنابراین به منظور پایین آورن خطر ابتلا به چنین بیماریهایی گسترش محصولات غذایی جدیدی که حاوی مواد بیولوژیکی هستند پیشنهاد میشود. ماست همواره از دیدگاه مصرف کنندگان بعنوان محصولی با تاثیرات مطلوب و تندرستی بخش میباشد. در نتیجه ارزیابی استفاده از عصارههای خوراکی در تهیه ماست و بررسی تاثیر آن بر خواص فیزیکوشیمیایی و حسی ماست ضرورت پیدا میکند. این تحقیق با هدف تولید یک ماست با استفاده از عصاره شنبلیله و میزان ماندگاری ترکیبات فنولیک موجود در عصاره شنبلیله در این ماست تولیدی در مرور زمان و بررسی خواص فیزیکوشیمیایی انجام شد. در این پژوهش، عصاره آبی شنبلیله به روش پرکولاسیون استخراج شده سپس میزان کل ترکیبات فنولی موجود در عصاره ها به روش فولین سیوکالتیو و قدرت مهارکنندگی رادیکال آزاد به روش 2و2- دی فنیل پیکریل هیدرازیل تعیین گردید. پس از آمادهسازی ماست مقادیر مشخصی از عصاره این گیاه را در سه سطح (1%، 2% و 5%) به ماست افزوده شد. مطلوبیت طعم، مطلوبیت عطر، مطلوبیت رنگ، مطلوبیت ظاهر، مقدار اسیدیته، تغییرات PH و اثر سینرسیس ماست مورد ارزیابی قرار گرفت. تجزیه واریانس با برنامه آماری SAS نشان داد که اثر مدت زمان نگهداری و میزان عصاره شنبلیله و همچنین تاثیر متقابل این دو عامل بر روی میزان سینرزیس نمونههای ماست تولید شده در سطح 1 درصد معنیدار میباشد و افزودن عصاره شنبلیله تاثیر معنیدار بر روی افزایش و کاهش PH داشت ودر مورد مقدار اسیدیته ماست بین نمونهها اختلاف معنیداری در سطح 1 درصد مشاهده شد.

The Study of Effect of Fenugreek Extract on Physicochemical ٫ Sensory and Shelf Life Properties of Yogurt
Abstract Essential oils and plant extracts are considered as very suitable food protectors. Less side effects than synthetic drugs, lack of drug resistance, health and environmental health are the benefits of using herbal medicines. Nutrition status of populations is affected by high absorption of sugar, salt, saturated fatty acids, low fiber intakes, vitamins and minerals. These dietary habits are among the main causes of chronic noncommunicable diseases. Therefore, in order to reduce the risk of such diseases, the development of food products A new one containing biological materials is suggested. Yogurt is always from the consumer's point of view as a product with a healthy and well-balanced effect. As a result, the evaluation of the use of oral extracts in the preparation of yogurt and its effects on our physicochemical and sensory properties is necessary. This research was carried out with the aim of producing yogurt using Fenugreek extract and the phenolic resin content of Fenugreek extract in this production during over time and studying physicochemical properties. In this study, Fenugreek blue extract was extracted by percolation method. Then, the total phenol content of the extracts was determined by Folin Cyclotyping method and free radical inhibitory potency by 2 and 2-diphenyl picyril hydrazyl. After the preparation of yogurt, the amount of extract of this plant was increased to 3 levels (1%, 2% and 5%). The desirability of flavor, perfume suitability, color suitability, appearance desirability, acidity, pH changes, and the effect of yarn syneresis were evaluated. Analysis of variance by SAS statistical program showed that the effect of storage time and amount of Fenugreek extract and their interaction on the synergistic rate of yogurt samples produced at 1% level was significant. Adding Fenugreek extract had a significant effect on increasing and decreasing pH There was a significant difference between the samples in terms of acidity of yoghurt at 1% level.
