بررسی تأثیر فرآیند حرارتی ماکروویو بر خصوصیات کیفی روغن کنجد

امواج مایکروویو بخشی از طیف الکترومغناطیس هستند که دارای فرکانسی حدود 300-300000 مگاهرتز و طول موج 001/0-1 متر در هوا می باشند. روغن کنجد علی رغم داشتن حدود 85 % اسیدهای چرب غیراشباع، مقاوم ترین روغن گیاهی به اکسایش است. تاکنون، دلیل این برتری ناشناخته باقی مانده است. اما اکثر محققان پایداری اکسیداتیو قابل توجه روغن کنجد را به وجود مواد غیر صابونی شونده لیگنانی (سزامول، سزامولین و سزامین) در آن نسبت داده اند. در این تحقیق، تیمار توان و زمان مایکروویو بر خصوصیات کیفی روغن‌ کنجد شامل تیوباربیتوریک اسید، عدد آنیزیدین، دی ان مزدوج، اندازه گیری رنگ روغن، ترکیبات فنولی کل، فعالیت آنتی اکسیدانی، ضریب شکست، اندیس پراکسید، اندیس اسیدی، پایداری حرارتی ، اندیس قهوه ای شدن و شاخص توتوکس با دو توان (540 و 900 وات) مایکروویو و سه زمان (4، 8 و 12 دقیقه) و در سه تکرار مورد بررسی قرار گرفت. نتایج نشان داد با افزایش توان و زمان مایکروویو ضریب شکست، پایداری یا مقاومت حرارتی روغن، تیوباربیتوریک اسید، عدد آنیزیدین، دی ان مزدوج، شاخص رنگ،اندیس پراکسید، اندیس اسیدی، شاخص قهوه ای شدن و شاخص توتوکس روغن کنجد به طور معنا داری افزایش یافت. به عنوان مثال بیشترین میزان پایداری حرارتی و بالاترین اندیس پراکسید روغن زمانی بدست آمد که توان به کار رفته مایکروویو 900 وات و زمان 12 دقیقه بود. نتایج همچنین نشان داد با افزایش توان و زمان مایکروویو خصوصیات کیفی روغن‌ کنجد شامل فعالیت آنتی اکسیدانی و ترکیبات فنولی کل به طور معنا داری کاهش یافت. به عنوان مثال کمترین میزان ترکیبات فنولی کل روغن کنجد زمانی بدست آمد که توان بکار رفته مایکروویو 900 وات و زمان 12 دقیقه بود. از نتایج آزمایشات فوق می توان نتیجه گرفت که فرآیند حرارتی روغن با مایکروویو باعث کاهش کیفیت روغن کنجد می شود که این امر با افزایش توان و زمان حرارت دهی با مایکروویو تشدید می شود. افزایش دما و حرارت دهی باعث افزایش اسیدهای چرب آزاد و اندیس پراکسید نمونه ها گردیده و پایداری روغن را کاهش می دهد و همچنین باعث کاهش خاصیت آنتی اکسیدانی و ترکیبات فنولی کل می گردد.

Investigation of the effect of microwave thermal process on quality properties of sesame oil

So far, the reason for this superiority has remained unknown. But most researchers have attributed the significant oxidative stability of sesame oils to the because of Presence Non-soap lignin based substances (szamol, sosamulin, and sesamin). In this research, microwave power and time treatment on the qualitative properties of sesame oil include The Thiobarbituric acid, anisidine number (p-AV) , conjugated DNA factor, oil color, total phenolic compounds, antioxidant activity, refractive index, peroxide index (PV), acidity index, thermal stability (using rancimat device), brown index and toutox index, with two power of microwave (540 and 900 watts) and in the three moment (4, 8 and 12 minutes) with three replications were investigated. The results showed that by increasing the power and time of the microwave, the refractive index, the stability or heat resistance of the oils, Thiobarbituric acid, anisidine number (p-AV), conjugated DNA factor, color index,peroxide index (PV), acidity index, brown index, and totox index of sesame oils significantly You got up. For example, the highest thermal stability and the highest index of peroxide were obtained when the power of the microwave was 900 watts and the time was 12 minutes. The results also showed that by increasing the power and time of the microwave, the qualitative properties of sesame oils, including antioxidant activity and total phenolic compounds, decreased significantly. For example, the lowest total phenolic content of sesame oil was observed obtained when the microwave power was 900 watts and the time was 12 minutes. From the results of the above experiments, it can be concluded that the thermal process of oil with microwave reduces the quality of sesame oil, which is exacerbated by increasing the power and temperature of the microwave. Increasing the temperature and heat increases the free fatty acids and the peroxide index of the samples and reduces the stability of the oil and also reduces the antioxidant properties and total phenolic compounds.
