بررسی استخراج تانن از گیاه خارشتر با استفاده از پیش تیمار ماکروویو و بررسی خواص انتی اکسیدانی ان
در این پژوهش ترکیبات پلیفنلی عصاره گیاه خارشتر از طریق امواج مایکروویو در زمانهای 1 دقیقه ، 3 دقیقه و 5 دقیقه و سپس با روش ماسوراسیون در دمای 25 ?C و دمای 55 ?C به مدت 24ساعت استخراج گردید و میزان ترکیبات پلیفنلی و قدرت مهارکنندگی عصارهها اندازهگیری شد.
تیمار حاوی بیشترین ترکیبات پلیفنلی، تحت آزمون رنسیمت در غلظتهای 200پیپیام، 500پیپیام و 1000پیپیام به روغن فاقد آنتیاکسیدان اضافه شد و پایداری حرارتی آن را با شاهد و روغن غنیشده با 200پیپیام BHT و روغن حاوی 200پیپیام اسیدتانیک، در دمای 110درجه سانتیگراد و 120درجهسانتی گراد مقایسه گردید. در ادامه غلظت های 500پیپیام عصاره، 200پیپیامBHT و 200پیپیام اسیدتانیک را به روغن سویا تصفیه شده فاقد آنتیاکسیدان افزوده گردید و در نهایت پایداری اکسیداتیو نمونهها در دمای 65درجه سانتیگراد به مدت سه روز (در زمانهای 0، 24، 48، 72 ساعت) از طریق اندازهگیری اندیس پراکسید و اندیس اسیدی، با یکدیگر مقایسه گردید. به طور کلی نتایج نشان داد بیشترین میزان استخراج ترکیبات پلیفنلی مربوط به روش مایکروویو با حلال اتانول 60درصد به مدت 5دقیقه بود که این تیمار تحت آزمون رنسیمت قرار گرفت، روغن حاوی عصاره 500پیپیام نسبت به عصاره 200پیپیام و شاهد از پایداری اکسایشی بیشتری برخوردار بود و عصاره 1000پیپیام نسبت به عصاره 500پیپیام از اختلاف معنیداری برخوردار نبود در نتیجه غلظت بحرانی ترکیبات آنتی اکسیدانی، در غلظت 500پیپیام عصاره میباشد، در دمای 120درجهسانتیگراد روغن حاوی عصاره 500پیپیام نسبت به روغنهای حاوی 200پیپیامBHT و 200پیپیام اسیدتانیک از پایداری اکسایشی بهتری برخوردار بود که این دلیل بر بالا بودن قدرت پایداری اکسایشی عصاره در دماهای بالا نسبت به آنتی اکسیدانهای سنتزی میباشد و عدداسیدی و عددپراکسید عصاره 500پیپیام نسبت به نمونه شاهد کاهش یافت و نسبت به نمونههای حاوی 200پیپیامBHT و 200پیپیام اسیدتانیک از مهارکنندگی قابل قبولی برخوردار بود.

in this study, firstlyAlhagi plant extract, derived polyphenolic compounds with microwaveat times (1 min) - (3 min) -(5 min) and then by usingmaceration method at 55 °C to 25 °C temperatureswas performed for 24 hours and then by usingFolin Sicalto test, attracting extracts performed using a spectrophotometer, then studied its antioxidant power. derived extract from microwave method with 60% ethanol for 5 minutes at concentrations 200 ppm under Rancimat test, 500 ppm and 1000 ppm, and thermal stability with control samples, samples enriched with oil 200 ppm BHTand oil samples containing 200 ppm tannic acid, at a 110 °C and 120 °C were compared.In the following, extract concentrations 500 ppm, 200 ppm BHT and 200 ppm of tannic acid added torefined soybean oil without antioxidants and finallyoxidative stability of samples at 65 °C for three days (at 0, 24, 48, 72 hours) by measuring the peroxide value and acid index, were compared with each other.The results showed the highest extraction rate of polyphenolic compounds were obtained related to microwave method with 60% ethanol for 5 minutes at different concentrations of the treatment, extraction of 500 ppm to 200 ppm extract and control had more stability oxidative and there are no significant difference between extracts from 1000 ppm to 500 ppm.As a result, critical concentrations of antioxidant compounds is related to the concentration 500 ppm this extract and at a 120 °C ,concentrations 500 ppm of extract compared with samples containing 200 ppm BHTto 200 ppm of tannic acid have better oxidative stability than the 110 °C and it is because of high rate of stability oxidation at high temperatures to extract antioxidants and acid number and peroxidenumber in extraction 500 ppm decreased compared with the control samples and it has perfect inhibited abilityagainst samples containing 200 ppm BHT and 200 ppm tannic acid
