بررسی تاثیر عصاره قاصدک بر بر ویِژگیهای فیزیکوشیمیایی و میکروبی ماست کم کالری پروبیوتیک
در این پژوهش اثر افزودن عصاره حاصل از گیاه قاصدک به ترتیب در سه سطح (02/0, 03/0, 04/0) درصد در قالب طرح آزمایش فاکتوریل ودر سه تکرار بهصورت طرح کاملاً تصادفی توسط نرمافزار SAS بر ویژگیهای میکروبی، فیزیکوشیمیایی, آنتیاکسیدانی، ترکیبات فنولی وحسی (هدونیک 5 نقطهای) ماست کمکالری موردبررسی قرار گرفت و تغییرات آن در طی 21 روز نگهداری با نمونه شاهد مقایسه گردید. نتایج نشان داد در روز اول پس از تخمیر، لگاریتم تعداد لاکتوباسیلوس اسیدوفیلوس در هر گرم تیمار حاوی 04/0 درصد عصاره قاصدک،26/7 بود. بهتدریج در طول مدت نگهداری تعداد میکروارگانیسم بهطور معنیداری (05/0p<) کاهش یافت. تا در روز بیست و یکم لگاریتم تعداد به 89/6 در هر گرم رسید. لگاریتم تعداد این میکروارگانیسم در هر گرم تیمار 03/0 درصد هرچند با شیب کمتری نسبت به تیمار 04/0 درصد، اما بازهم بهطور معنیداری (05/0p<) از 09/7 به 73/6 کاهش یافت. در مورد تأثیر عصاره قاصدک بر روی pH و اسیدیته باید چنین گفت که کمترین میزان pH مربوط به نمونه ماست 03/0 درصد با دامنه تغییرات (32/4-40/4 =pH) بود. همچنین pH هریک از نمونهها بهطور جداگانه در طول مدت نگهداری در هر مرحله بررسی نسبت به مرحله قبل، بهطور معنیداری کمتر بود (05/0p<). بیشترین مقدار اسیدیته متعلق به نمونه ماست حاوی 03/0 درصد و کمترین مقدار اسیدیته مربوط به تیمار شاهد بود. این تفاوت نیز ازنظر آماری معنادار بود (05/0p<). همچنین میزان آب انداختگی نمونه حاوی 02/0 عصاره قاصدک نسبت به سایر نمونهها بیشتر بود و نمونههای حاوی 03/0 درصد و 04/0 درصد به ترتیب در رتبههای بعدی قرار داشتند. بهترین نمونه ازنظر آب اندازی در طول مدت نگهداری و بهویژه در روزبیست و یکم، نمونه ماست 04/0 درصد عصاره قاصدک بود. میزان آب اندازی در طول زمان در تمامی تیمارها با شیب تقریباً یکنواختی کاهش یافت (05/0p<). نتایج نشان داد ازنظر مقدار فعالیت آنتیاکسیدانی ماست بین کلیهی نمونههای حاوی عصاره قاصدک و شاهد اختلاف معنیداری در سطح موردبررسی مشاهده شد (05/0 p ?). با افزایش مقدار عصاره در فرمولاسیون ماست تولیدی فعالیت آنتیاکسیدانی افزایش پیدا کرد. ازنظر پروتئین بین نمونههای شاهد پروبیوتیک و حاوی 02/0 درصد عصاره قاصدک تفاوت معنیدار آماری وجود ندارد ولی با نمونه حاوی 04/0 درصد عصاره قاصدک تفاوت معنیداری وجود دارد و افزودن عصاره قاصدک و باکتریهای پروبیوتیک اثر روی پروتئین ماست تولیدی داشته است. در مورد خاکستر نیز بین دادههایی که بهدستآمده تفاوت معنیداری وجود نداشت. ازنظر خواص حسی نیز در روز اول ماست حاوی 03/0 درصد عصاره قاصدک بالاترین امتیاز را ازنظر داوران کسب کرد. سپس، نمونههای (02/0 و 04/0) درصد در رتبههای بعدی قرارگرفتهاند. البته باید توجه داشت که نتایج ارزیابی داوران برای این سه نمونه، ازنظر آماری تفاوت معنیداری نداشت (05/0P<). نمونه ماست پروبیوتیک (شاهد) در تمامی طول مدت بررسی، بهطور معنیداری کمترین امتیاز را از طرف داوران دریافت کرد (05/0p<). در روز بیست و یکم، نمونههای پروبیوتیک حاوی (04/0 و 03/)0 درصد بهطور مشترک بهترین نمونه معرفی شدند و این درجه در روزهای بعد نیز تا پایان روز حفظ شد. اما نمونه حاوی 02/0 درصد بااینکه در روز اول بیشترین امتیاز را کسب کرده بود، از روز چهاردهم به بعد ازنظر داوران تفاوت معنیداری با نمونه شاهد نداشت (05/0p<).

Effect of dandelion extract on physicochemical and microbial properties of probiotic low calorie yoghurt
In this study, the effect of adding extracts of dandelion plant on three levels (0.02, 0.03, 0.04) in a factorial design and three replications in a completely randomized design with SAS software on microbial, physicochemical, Antioxidant, phenolic and hexavalent compounds (5-point hedonics) of the total yogurt were analyzed and the changes were compared to the control sample for 21 days. The results showed that on the first day after fermentation, the logarithm of the number of Lactobacillus acidophilus per gram of treatment containing 0.04% dandelion extract was 7.26. The number of microorganisms gradually decreased significantly during storage (p<0.05). On the 21st day, the logarithm reached 6.89 grams per gram. The logarithms of these microorganisms per gram of treatment were 0.03 percent, although with a slope less than 0.04 percent, but still significantly (p<0.05) decreased from 7.9 to 6.73. Concerning the effect of dandelion extract on pH and acidity, it should be stated that the lowest pH of the yoghurt sample was 0.03% with a range of changes (pH= 4.40-4.34). Also, the pH of each sample was significantly lower than the previous stage during storage in each stage (p<0.05). The highest amount of acidity belonged to yoghurt containing 0.03% and the lowest acidity was related to control treatment. This difference was statistically significant (p<0.05). Also, the amount of flushing of the sample containing 0.02 dandelion extracts was higher than other samples and samples containing 0.03 and 0.04% were in the next order, respectively. The best sample in terms of watering during storage and especially in the first and second day, our sample was 0.04% of dandelion extract. Over time, the amount of watering was reduced by almost uniformity in all treatments (p<0.05). The results showed that there was a significant difference in the amount of yogurt antioxidant activity between all of the dandelion extract and control samples (p<0.05). Increasing the amount of extract in the formulation of yogurt produced antioxidant activity. There was no significant difference between proteins in probiotic control samples containing 0.02% dandelion extract, but there was a significant difference between the samples containing 0.04% of dandelion extract and the addition of dandelion extract and probiotic bacteria were effective on the protein produced from yogurt. In the case of ash, there was no significant difference between the data obtained. Regarding the sensory properties, on the first day of our yogurt containing 0.03% of dandelion extract, the highest score was obtained from the judges. Then, samples (0.02 and 0.04%) are in the next rank. Of course, it should be noted that the results of the referee assessment for these three samples were not statistically significant (P<0.05). Probiotic yoghurt (control) received the lowest scores from the referees during the study period (p<0.05). On the 21st day, probiotic samples (0.04% and 0.03%) were jointly named the best, and this grade was preserved at the end of the day in the following days. However, the sample containing 0.02% had the highest score on the first day, from the 14th day after the referees did not have any significant difference with the control sample (p<0.05).
